Coconut Peanut Butter Chocolate Chip Oatmeal

Ingredients

Coconut Peanut Butter Chocolate Chip Oatmeal Ingredients - Mighty Nut Original powdered peanut butter

Oatmeal
3/4 cup oats (old fashioned or quick)
1 1/2 cups water
2 egg whites
1 tbsp. Mighty Nut Flax & Chia powdered peanut butter
1/8 tsp. salt
1/4 tsp. coconut extract
cinnamon to taste
sweetener to taste

For the frosting
1 1/2 tbsp. Mighty Nut Flax & Chia powdered peanut butter
1 tbsp. water
sweetener to taste
1 tbsp. shredded coconut
1/2 tbsp. dark chocolate chips

Directions

1. Add water to a small pot. Bring to a boil, then add oats. Reduce to medium heat and let simmer for about 5-6 minutes.

2. While still on medium heats, add egg whites and whisk into the oatmeal. Make sure to continually whisk well or you will have scrambled egg whites in your oatmeal!

3. Remove from heat. Add powdered peanut butter, salt, coconut extract, cinnamon and sweetener to taste.

4. Now, make peanut butter sauce. In a small bowl, add Mighty Nut powdered peanut butter, water, and sweetener to taste.

5. Put peanut butter sauce in a small plastic bag and cut the end off. Pipe peanut butter over top of the oatmeal. Top with chocolate chips and shredded coconut.
