It’s protein-rich because of the chia seeds and peanut butter, and it’s full of potassium because of the banana. Yield: 1 serving
1 frozen banana, chopped into half inch pieces
1 cup vanilla-flavored coconut milk (not canned), plus more as needed
1 cup plain & frozen cultured yogurt, plus more for garnish
½ cup unsweetened finely shredded coconut
2 tablespoons Dark Chocolate Dreams peanut butter
1 tablespoon chia seeds
1 teaspoon vanilla
1 teaspoon coconut sugar or honey, optional or to taste
Process all ingredients in a blender. If too thick, add a little more milk. Garnish with an extra scoop of frozen cultured yogurt. Enjoy!
