Maple Peanut Butter Donuts with Bacon Bits

Print This Recipe Print This Recipe

Yes, I know. Everyone knows that maple and bacon are a fantastic combination, but maple and bacon and peanut butter? Trust me, it’s not nearly as strange as it sounds. In fact, it’s downright delicious, especially when all of those flavors are combined together in a tender cake donut. (Because… well… everything tastes better in donut form.)

Mighty Maple peanut butter does double-duty in this recipe, appearing both in the tender maple-peanut butter donuts, and again in the sweet peanut butter frosting. Add a sprinkling of bacon bits and you’ve got yourself a mapley, bacony, peanut buttery treat that’s hard to resist.

Maple Peanut Butter Donuts with Bacon Bits

Ingredients

Maple Peanut Butter Donuts with Bacon Bits Ingredients - Peanut Butter & Co. Mighty Maple peanut butter

For the Maple Peanut Butter Donuts
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup brown sugar
1/4 cup Mighty Maple peanut butter
2 tablespoons canola oil
1 large egg
1/2 teaspoon maple extract
1/2 cup milk

For the Peanut Butter Frosting
1 cup icing sugar
1/4 cup Mighty Maple peanut butter
2-3 tablespoons milk
2 strips maple-cured bacon, crisp-fried and crumbled

Directions

Make the Donuts
1. Preheat oven to 350°F. Lightly grease a 6-cavity donut pan with cooking spray.

2. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

3. In a second mixing bowl, beat together the peanut butter, brown sugar, canola oil, egg, and vanilla until smooth and combined. Add the dry ingredients and stir until just barely combined, being careful not to overmix. (The finished dough should have the consistency of a very thick muffin batter.)

4. Spoon the batter into the prepared donut pan with a small spoon or a piping bag fitted with a large plain tip, filling each cavity about 2/3 full for best results. Resist the urge to overfill!

5. Bake in preheated oven for about 8-12 minutes or until the tops are golden brown and a toothpick inserted comes out clean. Let the donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool off completely.

Make the Frosting
1. While the donuts are cooling, prepare the frosting by combining the icing sugar, peanut butter, and 2 tablespoons milk in a small mixing bowl. Whisk until smooth. (The frosting should be thick, but pourable. If the frosting is too stiff, whisk in more milk 1 teaspoon at a time until it reaches the right consistency. If it’s too runny, add more icing sugar 1 teaspoon at a time.)

2. Dip the tops of the cooled donuts into the peanut butter frosting. Sprinkle with the crumbled bacon while the frosting is still wet, then let stand for 5-10 minutes to set before serving.
