If you love chocolate and coffee, then you will absolutely love these mocha chocolate chip protein blondies. They are moist, dense, and have the perfect combination of chocolate and coffee. Also, they are packed full of fiber and protein thanks to the garbanzo beans and mocha protein powder.

Yield: 8 blondies
1 can garbanzo beans, drained and rinsed
1/2 cup Mighty Nut Original powdered peanut butter
1 scoop Sunwarrior mocha protein powder
1/2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1/4 cup pure maple syrup (or honey/agave)
1/4 cup brown sugar
3 tbsp. almond milk (or regular milk)
2 eggs (for vegan, sub two flax eggs)
3 tbsp. coconut oil, melted
1 tsp. vanilla extract
3/4 cup dark chocolate chips
1. Add all ingredients except for chocolate chips to a food processor. Blend until a smooth batter forms.
2. Add 1/2 cup of the chocolate chips to the food processor and pulse a few times to incorporate.
3. Line a 6×8 inch glass baking dish with foil and spray with cooking spray. Spoon batter into dish. Sprinkle with top with remaining 1/4 cup of chocolate chips.
4. Bake for 20 minutes or until a knife comes out clean. Let completely cool then slice into 8 bars. Enjoy!
