Make-Ahead Peanut Butter Banana Oatmeal

I’m not much of a morning person, so it’s not unusual for me to end up grabbing a quick breakfast on my way into work. The only problem with that approach is that most of the options available to me are pretty unhealthy – they’re either full of sodium, full of sugar, full of fat, or all of the above. Which is why this make-ahead oatmeal is so fantastic. I just need to set aside a half-hour during the weekend to cook up a big batch of steel-cut oats and portion it out into heat-proof mason jars, and then it’s as easy as grabbing a jar as I’m dashing out to work in the morning.

I try to change up the flavors from one week to the next, just for the sake of variety, but this combo of banana and peanut butter shows up frequently in the rotation. I like the touch of sweetness and spice that the Cinnamon Raisin Swirl peanut butter adds, but feel free to switch up with your favorite Peanut Butter and Co flavor!

3 cups milk (or substitute almond milk for a vegan version)
2 very ripe bananas, mashed
1/4 teaspoon salt
1 cup steel-cut oats
1/4 cup Cinnamon Raisin Swirl peanut butter


1. In a large saucepan set over medium-high heat, whisk together the milk, mashed banana, and salt, and bring to a boil.

2. Stir in the oats, then turn down the heat to low and simmer for 20 minutes, stirring occasionally, until the oats are soft and have absorbed almost all of the liquid. Remove from heat and stir in the peanut butter.

3. Spoon the hot oatmeal into five 1-cup mason jars (or any other microwave-safe container with a tight-fitting lid), and set aside to cool, uncovered. Once the jars are completely cooled, seal them up with lids and transfer to the refrigerator until ready to use.

4. To serve, simply microwave the uncovered jars for 1-2 minutes on high or until warmed through. If you so desire, feel free to garnish with sliced bananas, a swirl of honey and/or a splash of fresh cream, then dig in!

    Not going to lie, but I am in total agreeance with the recipe itself that oatmeal is hands down one of the best (and my favorite!) breakfast foods to incorporate peanut butter into. 🙂 Haha, the only change I may make to this recipe would be to stir in maybe a teaspoon or two if brown sugar, or drizzle a little bit of maple syrup or honey on top…

    Do I have to pick just one way? Well, if it’s the cinnamon swirl PB, then I’m spreading it onto 2 slices of Ezekiel grain cinnamon raisin bread, adding sautéed banana slices, closing it up and then dipping into an egg, milk, cinnamon bath and then sautéing in coconut oil in both sides until done. Cinnamon raisin PB banana stuffed French toast! Yup, that’s the best one!

    My favorite thing to use it on is toast…then i add a little Nutella on top. Nothing better than warm gooey peanut butter and melted Nutella.

    The PB pancake: Mix 1tblsp PB (Dark chocolate dreams is my fav), 1 egg and 1/8tsp baking powder (I use a mini blender). Microwave for about 1 minute 15 seconds.

    This sounds delicious, but in a hurry, I like to have peanut butter spread on a rice cake or two, and if I’m on the go, have a banana on the side; if I have a minute to sit, I’ll slice the banana to layer on top of the peanut butter! Or just sprinkle extra raisins on top of the Cinnamon Swirl Raisin PB!

    My favorite way to enjoy peanut butter for breakfast: On fresh waffles made from oat flour prepared in my Vitamix from rolled oats, spread peanut butter on top of the warm waffles, top with fresh cut organic strawberries, and drizzle honey or maple syrup on top. Enjoy!
