Peanut Butter Chocolate Chip Wookie

Food hybrids are a great way to get creative in the kitchen, and this Smooth Operator Chocolate Chip “Wookie” is no exception! Part waffle, part cookie, this unique treat combines the crispy crunchy goodness of a cookie with the fluffy, doughy insides of waffle. It’s the best of both worlds in one delightful package, and it’s easier to make than you think! Ready in just 30 minutes, this is an easy recipe to prepare whenever you craving something sweet. This freezes incredibly well – simply warm them in the toaster oven for 5 minutes – and just like a cookie, they’re best enjoy with a giant glass of ice-cold milk.

Ingredients

Wookie ingredients

For the cake:
1 1/4 cups all-purpose flour, sifted
1 1/2 tsps. baking powder
1/4 tsp salt
1/4 cup salted butter
1/3 cup Smooth Operator peanut butter
1 large egg
3 tbsps. granulated sugar
2/3 cup skim milk (I used 2%)
1/2 tsp vanilla
1/2 dark chocolate chips (or more if you’d like!)

Directions

  1. 1. Pre-heat your waffle iron to just past the “Medium” setting. If your waffle iron isn’t non-stick, you will need to grease it prior to using.

  3. 2. In a large mixing bowl combine the flour, baking powder, and salt. In another mixing bowl add the salted butter, then melt in the microwave for about 15 seconds. Add the peanut butter, then warm in the microwave once more, about 10 seconds. Whisk until smooth. Add the egg, sugar, milk, and vanilla to the peanut butter mixture, stirring until combined. Slowly add the dry ingredients to the wet, stirring thoroughly until the batter takes shape. Lastly stir in the chocolate chips, again mixing well. The batter will be reminiscent of cookie dough, but stickier.

  5. 3. Using damp hands, roll the batter into 10 or 12 rounds, about 2” in circumference. Add one round to the center of each waffle grid, then close the lid. Bake for 5 minutes until completely browned and crisp, peeking mid-way to inspect your progress (every waffle iron is different, so it’s good to do this!) Repeat until all ingredients have been used, transferring the cooked wookies to a wire cooling rack as you go.

  7. 4. When ready, eat! These are best enjoyed with vanilla ice cream or a glass of milk for dunking.
