Sandwiches are a classic grab and go meal. Which is why they make perfect lunches. There are also endless possibilities when it comes to what goes between the bread, which keeps it versatile. This savory version is smeared with a generous amount of peanut butter mixed with cilantro, onion, garlic, and vinegar and piled with cool cucumber slices and creamy avocado. The result is one tasty sandwich. If you want to serve this as a fancy hors d’oeuvres, slice bread in half or half-triangles and skip adding the top piece.

Peanut Butter Cucumber Sandwich Ingredients - Peanut Butter & Co. Old Fashioned Smooth Peanut Butter

6 tablespoons Old Fashioned Smooth Peanut Butter
2 tablespoons finely chopped fresh cilantro
2 tablespoons finely chopped red onion
1 clove garlic, minced
4 teaspoons rice vinegar
1 cucumber, peeled and sliced
1 avocado
8 slices of bread
Salt and pepper, to taste


1. In a small bowl combine the peanut butter, cilantro, red onion, garlic, and rice vinegar. Stir well.

2. To assemble, smear some of the peanut butter mixture on four slices of bread. Top with the avocado and cucumber. Sprinkle with salt and pepper. Top with remaining bread. Slice and serve.

Note: If you only want to make a single serving, you can make the peanut butter spread and keep in the fridge for up to a week until ready to use.

    Apples and Pear Sandwich’s with Peanut butter hands down. You get the sweetness of say a honey crisp apple, paired with the saltiness of the Peanut Butter. mmm.

    I pair peanut butter with any and every fruit. It goes great with nectarines and mangoes. Also grapes and oranges and pineapple and cannalope. I love it with all fruits 🙂

    The craziest combo I have had is peanut butter, soy sauce, chicken, cilantro and pineapple with cabbage slaw on a sandwhich. Like a stir fry sandwich.

    The fanciest pb sandwich is actually one that I make ALL of the time! I toast 2 slices of Ezekial bread. Then I spread natural peanut butter on both sides. I leave them open faced and drizzle honey on them and sprinkle cinnamon. THEN I top one of the halfs with sliced bananas and fresh blueberries. I top the other half with sliced fresh strawberries. I eat them separately so the “sandwhich” lasts longer 🙂

    My fanciest creation has been an absolutely gigantic smooth operator sandwich on two large slices of cinnamon raisin bread, with chocolate chips, crushed banana chips, almond slithers, more raisins, and a drizzle of honey.     I think that using peanut butter in sandwiches makes everything better! I seriously have not gone a day without using it in a sandwich! My fanciest sandwich was a vegetable salad sandwich with peanut butter dressing.
