If you like peanut butter cookies, these tartlets are for you – the crust is basically a peanut butter cookie! For a nice balance of flavors, the peanut butter cookie shells are filled with apricot preserves and drizzled with white chocolate. Since these tartlets are two-bite-sized, they’re the perfect little treat for serving at a party or cookie exchange.

Prep time: 1 hour
Cook Time: 15 minutes
Total time: 1 hour and 15 minutes
Yield: 30 tartlets

Ingredients

1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup White Chocolate Wonderful peanut butter
2 tablespoons butter, at room temperature
2/3 sugar
1 large egg
1 large egg
2 teaspoons vanilla bean paste
about 1/2 cup plus 2 tablespoons Peanut Butter & Co. Awesome Apricot Preserves
2/3 white chocolate chips

Procedure

1. Preheat oven to 375°F; line a mini muffin tray with paper liners.

2. Whisk together the flour, baking soda, and salt in a medium bowl and set aside. Cream together the peanut butter and butter, then cream in the sugar. Mix in the egg and vanilla bean paste, and then stir in the dry ingredients.

3. Press 2 teaspoons of dough into the bottom of each prepared mini muffin well. Bake until the cookie cups are puffed and light golden, about 12 to 14 minutes. Immediately after removing from the oven, lightly press a 1/2-teaspoon round measuring spoon into the top of each cookie cup (this will form the well that holds the apricot preserves). Right after making the wells in the tops of the cookie cups, fill each with 1 teaspoon apricot preserves. Cool completely.

4. Once the tartlets are cool, melt the white chocolate in a microwave or double boiler and drizzle on top of the tartlets. Let the chocolate set before serving.

    Gah, these look so delicious! I might swap out the apricot preserves for raspberry because raspberry & white chocolate is my favorite flavor combination around! I bet these would also be great with a marshmallow creme filling with a Nutella drizzle. YUMMMM!

    I must bake these tartlets! I would swap a banana creme filling for the preserves and drizzle a simple dark rum, brown sugar, and cinnamon glaze over them.

        The same rum and brown sugar glaze pairs well with extra ripe plantains. You may wish to boil black plantains or sauté them in the glaze, then use them to fill the peanut butter tartlets.

    Many apricots are also cultivated in Australia, particularly South Australia, where they are commonly grown in the region known as the Riverland and in a small town called Mypolonga in the Lower Murray region of the state.
