Nothing says fall quite like pumpkin, which is why I love the new Pumpkin Spice peanut butter from Peanut Butter & Co. It’s got wonderful pumpkin flavor, a mellow hint of spice, and that unmistakable peanut buttery taste. And while all I really need to eat with it is simply a spoon, baking it into cookies feels much more civilized. These soft-batch variety are wonderfully pillowy and sweet, with a moist and fluffy texture that makes them perfect on their own or when dunked into a tall glass of milk. And if you drizzle a little extra pumpkin spice peanut butter on top? I won’t blame ya!

Prep time: 10 minutes + chilling the dough for 1 hour
Cook Time: 12 minutes
Total time: 1 hour and 22 minutes
Yield: 20 large cookies

2 cups all-purpose flour
1 teaspoon baking soda
pinch of salt
3/4 cup Pumpkin Spice peanut butter, melted
1/2 cup salted butter, melted
1/2 cup dark brown sugar
1/2 cup white sugar
1 large egg
1 large egg yolk
1 1/2 teaspoons vanilla
1/2 cup pure pumpkin puree
Shortening to grease
Coarse white sugar to decorate


1. In large mixing bowl combine the flour, baking soda, and salt, whisking until well combined.

2. In another mixing bowl combine the pumpkin spice peanut butter and salted butter (both melted) until well mixed. Next, add in the brown sugar, white sugar, egg, egg yolk, vanilla, and pumpkin puree, stirring vigorously until mixture is smooth.

3. Slowly add the dry ingredients to the wet, stirring constantly until dough takes shape. Once dough is formed, transfer to refrigerator to chill for 1 hour.

4. Preheat oven to 350°F. Lightly grease two baking sheets with shortening.

5. When ready, using your hands roll dough into just larger than golf ball size rounds, then transfer to baking sheet – repeat until all ingredients have been used. Next, flatten tops of rounds with the back of a teaspoon, then crisscross with fork marks if you so please. Lastly top each flattened round with a healthy dose of sprinkles, then bake for 12 minutes until cookies are just barely set. Remove from oven and allow to cool fully, then eat!
