Pumpkin Spice Peanut Butter Dirt Cake

It’s time to (pumpkin) spice things up in the kitchen with these kitschy-cute pumpkin spice peanut butter dirt cake parfaits!

These little parfaits are inspired by the nostalgic treat known as “dirt cake”, but offer a few flavor surprises. While many recipes feature crushed chocolate wafer cookies for the “dirt”, this recipe ups the delicious quotient by employing a mix of brownies crumbled with Peanut Butter and Company’s crave-worthy seasonal Pumpkin Spice flavor. Layers of this delectable “dirt” alternate with a creamy chocolate pudding mixture to form parfaits, which are topped with gummi worm candies to give them a kid-approved finish that is just as palate-pleasing for adults.

Ingredients

8 oz. heavy whipping cream, or 2 cups whipped cream
1 8-inch pan of baked and cooled brownies (we like this recipe)
1/2 cup Pumpkin Spice peanut butter
1 3.9 oz box instant (no-cook) chocolate pudding mix
1 1/2 cups cold whole milk
1 6 oz package gummi worms
Small clear plastic glasses (4-6 ounce capacity) or 4 ounce mason jars, for serving (see recipe note)

Directions

  1. 1. Start by making whipped cream. Pour the heavy whipping cream in the bowl of a stand mixer fitted with the whisk attachment (alternately, this can be done in a large bowl with a hand mixer, or manually with a whisk, in which case you will be getting some great cardio), beat on high until the mixture transforms to whipped cream and holds firm peaks. No need to add sugar, because the mixture you’ll add it to later is already pretty darned sweet. Place the bowl in the refrigerator for the moment.
  2. 2. Place all of the the brownies in a large mixing bowl. Add the Pumpkin Spice peanut butter to the bowl. Using impeccably clean hands, break up the brownies and mix with the peanut butter until you have a nice, crumbly mix. Set the bowl aside.

  4. 3. In yet another large mixing bowl (larger than you think you need, because you’ll be adding to it in a little bit) combine the pudding mix and cold milk. Whisk by hand until it starts to thicken (it won’t take long). As a note, my pudding mix called for 2 cups of milk in the instructions; I reduced the amount slightly because as you’ll see in the next step, you’ll be incorporating whipped cream, so it’s fine for the pudding mix to be slightly thicker
  5. 4. Fetch that bowl of whipped cream from the refrigerator. Spoon the whipped cream into the large bowl containing the pudding mix, and fold it in gently with a whisk or spatula until no streaks of white remain.
  6. 5. Take a deep breath and get ready to make some magic! Grab one of your plastic cups or mason jars. Since you may be using a different sized vessel than me, my suggestion is to make one parfait at a time; that way, you won’t end up with uneven portions. To start, spoon a bit of the brownie mixture on the bottom, to form a nice base. No specific amount needed; just make sure it’s a fairly even layer that covers the bottom of the cup.

  8. 6. Next, spoon a bit of the pudding mixture on top; it’s not a scientific amount here, but enough so that it covers all of the brownie mixture and forms a definite layer on top.

  10. 7. Spoon a little more of the brownie mixture on top of that, then a little bit of the pudding on top of that. You can form as many layers as you like or as your vessel permits, but be sure to finish with a brownie layer.

  12. 8. Garnish the top with some gummi worms.
  13. 9. Repeat with your remaining vessels until you’re out of brownie and pudding mix.
  14. Recipe note: In terms of serving, you can choose pretty much any sized vessel you like. For individual (single serving) portions, use 4-6 ounce vessels; you’ll get about 12 servings. For larger parfaits ideal for sharing, use larger (6, 8, or 9-ounce) clear cups or jars; you’ll get about 6 servings. Alternatively, you can use one larger bowl to create a single dessert which can be spooned and served to a crowd

    This should go without saying, but if you’ve found this recipe and it’s not Pumpkin Spice peanut butter season, you can substitute your favorite Peanut Butter and Company flavor; Smooth Operator and Dark Chocolate Dreams would both work splendidly.
