The Bee’s Knees Peanut Butter Waffles

Waffles are in regular rotation in our house – they’re a must on weekends, and leftovers are frozen to pop into the toaster on more rushed weekday mornings. The addition of peanut butter boosts protein, which helps the boys get through long school days. If you don’t have The Bees Knees or Mighty Maple peanut butter, Smooth Operator or Crunch Time works well too – just add a tablespoon of maple syrup, honey or brown sugar to add a touch of sweetness.

Prep time: 10 minutes
Cook Time: 20 minutes
Total time: 30 minutes
Yield: 6 servings

Ingredients

1 cup all-purpose flour
1 cup whole wheat flour
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup The Bees Knees or Mighty Maple peanut butter
2 large eggs
2 cups milk
1/4 cup canola or other mild vegetable oil

Procedure

1. In a large bowl, stir together the flours, baking powder and salt. In another bowl, whisk together the peanut butter, eggs, milk and canola oil until smooth. Add the wet ingredients to the dry ingredients and stir just until blended.

2. Preheat your waffle iron, then ladle in the batter (about 1/3-1/2 cup at a time) and cook according to the manufacturer’s directions, or until crisp and golden. If you like, keep the waffles warm in a baking dish in a 250°F oven while you finish cooking the batter.

    looks ok but i would never put it in the batter. I’ve made peanut butter belgians many times for the wife and fam, and they love them! I’ve never used your brand of PB, becase I’ve never seen it in a store up here, but would love to try some!!! I usually use Emeril’s recipe, very sweet and the folded in egg whites make them very wonderful tasting!!!

    #decadence…these would be good for any occasion. however, it would be the perfect surprise to wake up to nice fresh batch of Bee’s Knees Peanutbutter Waffles! (I think they’d be best with Dark/White Chocolate or Cinnamon Swirl)

    I would HAVE To make the Bee’s Knees Peanut Butter Waffles. My 9 yr old son is a Waffle/Pancake ADDICT. He puts Peanut butter ON the pancakes and waffles, but I have never incorporated the pb into the recipe. SO, I would make these for him. He eats pancakes/waffles about 5 times a week! He cant get enough! 🙂

    How about making thin waffles and right as they are done take them off the griddle and form them useing a small bowl. Then use the “waffle bowl” and put butter pecan ice cream in it and drizzel honey or maple syrup or both over the ice cream making sure some get on the waffle!!!

      We have a new tradition in our fiamly thanks to this fantastic recipe . Waffle Sunday! My little one just loves that she too can eat belgian style waffles like everyone else. The kids have been getting creative the past few weeks adding cinnamon, chocolate chips (divvies or enjoy life), and berries (not all at once). The cinnamon are our new favorite!One thing I do to make this a sleep in late for mommy morning (or at least pretend to be sleeping) is pre-mix the dry ingredients and store it in tupperware. Then my husband only has to measure the wet ingredients and somehow the kitchen doesn’t become quite as much of a disaster.Thanks again Kelly! We love your book!

    Well we tried this recipe tonight and it really wasn’t what I expected the first waffle was really really dry. We added some water and some honey and they were wetter but taste wasn’t that good. We used the Bees Knees peanut butter which is my favorite but I probably won’t be making these again.

    I just tried this recipe this morning and I agree that the one cup of baking powder was way too much! I had to force myself to finish them. It just didn’t taste right. I feel even 1/4 cup would be too much.
