VIDEO RECIPE: Baked Sweet Potato Fries with Spicy Mayonnaise Peanut Butter Sauce

For these fries we swapped out the usual spud for its colorful cousin to bring in a sweeter flavor. We paired these baked fries with a mayonnaise dip that received a spicy kick from our The Heat Is On peanut butter!

Cook Time: 30 minutes
Total time: 50 minutes
Yield: 4-6 servings

Ingredients

For the sweet potatoes
4 large sweet potatoes
Kosher salt
grapeseed oil

For the dip
1 1/2 cups buttermilk
1/2 cup mayonnaise
2 tablespoons The Heat is On peanut butter (more if you want it spicier)
1/2 teaspoon kosher salt

Directions

1. Preheat oven to 400°F. Cut potatoes into 3” long and 1/2” wide sticks (do not peel).

2. Toss potatoes with grapeseed oil until well coated, and season with salt. Spread evenly onto 2 baking sheets and roast for 20-30 minutes, turning halfway through until crisp and golden on all sides.

3. Prepare the dip by pureeing the buttermilk, mayonnaise, peanut butter, and salt until smooth. Serve with hot sweet potato fries.
