Ingredients
3/4 cup sugar
3/4 cup all-purpose flour
1/2 cup unsweetened cocoa powder/span>
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup whole milk
1 stick unsalted butter, melted, plus 1 stick unsalted at room temperature
1 large egg, lightly beaten
1/2 cup Smooth Operator peanut butter
2 cups confectioners’ sugar
Chopped peanuts for garnish, optional
Procedure
1. Preheat oven to 350° F. Line a 12-cup muffin tin with paper liners. In a large bowl, whisk together sugar, flour, cocoa, baking soda, baking powder, and salt. Add milk, melted butter, and egg and stir to combine. Use a 1/4-cup measure to divide batter among muffin cups. Bake 20 to 25 minutes, or until a toothpick inserted in the center of cupcake comes out with a few crumbs. Let cupcakes cool in tin 5 minutes, then turn out onto a wire rack to cool completely.
2. When cupcakes are cool, combine room temperature butter, peanut butter, and confectioners’ sugar in a medium bowl. Use a handheld mixer to beat together. Spread tops of cupcakes with frosting and sprinkle with peanuts.
