This parfait is layered with two puddings made from scratch, chocolate and peanut butter, the most delectable flavor duo ever bestowed upon desserts.

Top with some crème fraiche and chopped peanuts for an impressive dessert that’s easy to make! The parfaits’ elegant presentation makes them a great dessert choice for parties or special dinners.

Ingredients

For the chocolate pudding:
¼ cup cornstarch
½ cup granulated sugar
1 teaspoon kosher salt
2½ cups whole milk
½ cup heavy cream
8 ounces 72% chocolate, chopped
1 tablespoon pure vanilla extract

For the peanut butter pudding:
¼ cup cornstarch
½ cup granulated sugar
1 teaspoon kosher salt
2 cups whole milk
1 cup Smooth Operator peanut butter
1 tablespoon pure vanilla extract

crème fraiche & chopped roasted salted peanuts for garnish

Procedure

1. Whisk together the cornstarch, sugar, and salt in a medium saucepan. Slowly whisk in the milk until smooth.

2. Cook over low heat, stirring occasionally, until thickened (about 10 minutes).

3. Remove from heat and whisk in the chocolate and vanilla until smooth. Transfer to a container, cover with plastic, and let cool.

4. Make the peanut butter pudding: whisk the cornstarch, sugar, and salt together in a medium saucepan. Slowly whisk in the milk until smooth.

5. Cook over low heat, stirring occasionally, until thickened. (About 10 minutes.)

6. Remove from heat and stir in peanut butter and vanilla until smooth. Transfer to a container, cover with plastic, and let cool.

7. Place puddings in pastry bags and layer into parfait cups.

8. Garnish with crème fraiche and peanuts.
