12 cups (12-ounce box) unsweetened rice cereal, such as ChexTM Mix*
1 cup semisweet chocolate chips
1/2 cup Dark Chocolate Dreams peanut butter
4 tablespoons unsalted butter
1/2 teaspoon pure vanilla extract
1 1/2 cups confectioners’ sugar
*You may also use their corn or wheat cereal varieties
1. Place cereal in a large heatproof bowl.
2. Combine chocolate chips, peanut butter, butter, and salt in a medium saucepan over medium heat. Bring to a simmer, stirring to melt butter and peanut butter; stir in vanilla. Pour hot chocolate mixture over cereal, cover with a plate or another bowl, and shake to coat. Add sugar and shake to coat again.
3. Scatter cereal mixture over two wax-paper-lined baking sheets and set aside to cool. Store cereal in airtight containers up to 3 days.
