This recipe is loosely based on a miso cod recipe that originally appeared and became famous from Nobu’s restaurant years ago.
The introduction of peanut butter to the dish gives a classic nutty flavor that brings some sweetness to round out the salty umami flavor of the miso. This easy interpretation of the well-known dish is a perfect choice for entertaining and dinner parties.

Yield: 4 (approximately 6-ounce) pieces cooked fish
¼ cup red or white miso
¼ cup Smooth Operator peanut butter
2 tablespoons rice wine vinegar
1 finely chopped garlic clove
1 (1½-pound) skinless cod fillet
4 scallion whites, sliced
2 teaspoons sesame oil
Kosher salt and freshly ground black pepper
1. Preheat oven to 400°F. In a small bowl, stir together miso, peanut butter, vinegar and garlic. Pat fish dry with paper towel and transfer to a foil-lined baking sheet. Spread fish with peanut butter mixture. Drizzle with sesame oil and season with salt and pepper.
2. Bake fish 13 to 15 minutes or until browned and flakes easily with a fork.
3. Sprinkle with scallions before serving.
