For the pudding
1 pound loaf day-old brioche, cut into 1” cubes
2 cups heavy cream
2 cups whole milk
1/2 cup (1 stick) butter, melted + more for greasing pan
4 large eggs
1/2 cup White Chocolate Wonderful peanut butter, warmed slightly
1 cup granulated sugar
1 tablespoon vanilla extract
1 teaspoon kosher salt
1 cup white chocolate chips

1. Preheat oven to 300° F. Butter an 8 x 12-inch ceramic or glass baking dish and set aside.

2. In a very large bowl, whisk together cream, milk, melted butter, eggs, peanut butter, sugar, vanilla, and salt until smooth. Add the bread and toss to coat. Let soak 30 minutes, tossing occasionally, until fully soaked.

3. Stir in white chocolate chips, then spread into the prepared baking pan along with any remaining liquid.

4. Cover with foil, and bake 40 minutes, then remove foil and bake an additional 20-30 minutes, or until pudding is set, slightly puffed and golden on top.
