Quick and Easy Peanut Butter Kulfi (Frozen Dessert)

My maternal grandmother, who lived in San Francisco for about 20 years, developed many convenient “tricks and shortcuts,” as she would call them, to help with her cooking. This kulfi recipe makes use of one of those shortcuts – the use of evaporated and sweetened condensed milk. This recipe requires no cooking and gives you such a near perfect rendering of an authentic kulfi that it’s what I now use in my everyday repertoire.

  • Total Time:5 minutes (plus 8 hours to freeze)

Supplies

Kulfi molds

Ingredients

1 cup heavy cream

14oz sweetened condensed milk

12oz evaporated milk

1/2 teaspoon ground cardamom

1/2 cup smooth peanut butter

Directions

  1. Place all ingredients in a large blender. Process to mix well, 3 to 4 minutes.

  2. Pour into kulfi molds, a loaf pan or popsicle molds and freeze until solid, preferably overnight.

  3. Serve on its own or with a few pieces of Peanut Raisin Chikki (Peanut Brittle).
