Spicy Peanut Butter Tofu Rice Salad

Salads are the best way to get in some much needed nutrition. And it’s always better when it’s a salad you can actually look forward to eating.

This spicy peanut tofu rice salad is full of delicious flavors. Between the nutritious greens, the fiber-rich rice, and the super-flavorful dressing, this salad is exactly what you need for a healthful and inexpensive meal.

If you would like this salad to be not spicy, you can use Smooth Operator peanut butter.

Spicy Peanut Butter Tofu Rice Salad

Ingredients

1/2 cup The Heat Is On peanut butter (or Smooth Operator peanut butter)
2 tablespoons Shiro miso paste
1 tablespoon pure honey
1 cup cool water
1 1/2 tablespoons soy sauce
A dash of cayenne pepper, optional
2 cups cooked brown rice, cooled
8 ounces (about 1 cup) extra firm tofu, cubed
6 cups mixed salad greens (arugula, swiss chard, spinach, etc.)
1 cup frozen peas

Directions

1. Combine the peanut butter, miso paste, honey, water, soy sauce, and cayenne pepper, if using, in your blender. Blend until smooth. Defrost the peas and set aside.

2. Add the brown rice and tofu to a medium-sized bowl. Pour in about half of the prepared dressing.

3. Gently stir and add more dressing to your liking. Let the rice mixture sit for 5-10 minutes. The longer you let it sit, the more flavor will be absorbed into the tofu and rice.

4. Evenly disperse the salad greens into four bowls. Portion out the rice mixture. Next, sprinkle the peas onto the salad. At this point you can serve the salad as is, or you can pour on a little additional dressing. You can also put a light sprinkling of cayenne to give it a little more heat if you’d like.

    I’d replace the peas with edamame & add sliced water chestnuts & celery for crunch.
