Homemade caramel popcorn couldn’t be any easier! This popcorn is covered in a caramel sauce made in just minutes on the stove top by stirring together honey, sugar, and peanut butter.
Mixed with some roasted salted peanuts you have a salty, sweet peanut buttery snack perfect for watching the big game!

Yield: 1 large bowl of popcorn (about 8 cups)
1 bag microwave popcorn, popped (use a lightly salted variety)
3/4 cup honey
1/3 cup granulated sugar
1 teaspoon kosher salt
1/2 cup Smooth Operator peanut butter (works well using other flavors, too)
2 teaspoons vanilla extract
2 cups roasted salted peanuts
1. Spread popped corn on a baking sheet or place in a large bowl. Combine honey, sugar and salt in a small saucepan and bring to a boil. Let simmer about 2 minutes, then turn off heat and stir in peanut butter and vanilla, whisking until smooth and creamy.
2. Immediately pour hot caramel over popcorn and stir until kernels are fully coated.
3. Stir in peanuts and serve. (Sprinkle on a bit more salt, if desired.)
